Overview
Health nutrition vitamins concerns the role of vitamins as essential micronutrients in supporting health, preventing deficiency-related disease, and maintaining vital physiological processes. Vitamins, including A, the B group, C, D, E, and K, are required in small amounts for functions such as immune defence, metabolism, vision, and bone and tissue maintenance, and adequate intake depends on diet, food composition, and access to nutrient-rich foods. The study of vitamins within nutrition examines dietary sources, the consequences of inadequate intake, and the broader patterns and determinants of micronutrient nutrition across populations. Research relevant to this area examines childhood micronutrient deficiency and its relationship to household economic status, the improvement of micronutrient intake through consumption of underused plant foods, and complementary feeding recommendations and practices for young children. Studies also consider functional foods, balanced-diet frameworks such as the food pyramid, the epigenetic interaction between nutrition and gene expression, and the nutritional status and dietary diversity of vulnerable groups including pregnant women and young children. Further work addresses nutraceuticals and high-fat dietary approaches.
