Overview
Food safety and human nutrition concerns the practices and principles that ensure food is both safe to eat and supportive of health. Food safety addresses the prevention of foodborne illness by controlling biological, chemical, and physical hazards, such as pathogenic microorganisms, toxins, contaminants, and adulterants, throughout production, processing, storage, and preparation. Human nutrition concerns the role that food and its constituent nutrients play in growth, metabolism, disease prevention, and overall well-being. The two are closely linked: unsafe food can cause illness and undermine nutritional status, while a safe, balanced diet supports health and reduces the risk of diet-related disease. Effective oversight spans hygiene, regulation, monitoring of contaminants, and dietary guidance. As a journal of nutrition, this title publishes peer-reviewed research across these themes, including work on the role of biogenic amines in nutrition toxicology, the relationship between nutrition and the gut microbiota, dietary guidelines and eating patterns, and the nutritional status and health outcomes of vulnerable populations such as women and children. These contributions reflect the journal's engagement with both the safety and the nutritional quality of the food supply.
