Overview

Antioxidants are molecules that inhibit the oxidation of cellular substrates by neutralising reactive oxygen species (ROS) and other free radicals, either by donating electrons or hydrogen atoms or by chelating the transition metals that catalyse radical formation. They are classified as enzymatic, including superoxide dismutase, catalase and the glutathione-dependent systems, or non-enzymatic, encompassing dietary and endogenous compounds such as ascorbate, tocopherols, carotenoids, polyphenols and reduced glutathione. By limiting oxidative damage to lipids, proteins and nucleic acids, antioxidants help maintain redox homeostasis, and an imbalance between ROS generation and antioxidant defence underlies oxidative stress implicated in ageing, metabolic and cardiovascular disorders, and tissue injury. In plant biology and applied agronomy, the antioxidant system is central to abiotic stress tolerance, mitigating ROS accumulation under heavy-metal exposure, drought and salinity. The peer-reviewed research collected here spans complementary lines of inquiry: enzymatic antioxidant responses in crop and tree species under metal and rooting stress, the antioxidant capacity of plant- and algae-derived phenolic extracts, methods for quantifying total antioxidant status, and the role of micronutrient and dietary antioxidants in metabolic and age-related conditions. Together these studies address mechanisms of radical scavenging, analytical measurement, and the physiological consequences of antioxidant activity across plant and biomedical systems.
